Ingredients:
3 Carrots Peeled (diced)
3 Stalks of Celery (diced)
3 Small Potatoes (diced)
1 Med. Yellow Onion (finely diced)
2 Cups of Frozen Corn
2 1/2 Cups of Whole Milk
2 Tablespoons of Corn Starch
Salt and Pepper to taste
Avocado Oil (or alternative cooking oil)
Instructions:
1. In a large saucepan or soup pot, drizzle oil, just enough to cover the bottom of the pot, place over low heat
2. Add potatoes, carrots and celery to pot and cook approximately 4-5 mins, stirring occasionally
3. In a mini food processor grind 1 cup of frozen corn with cornstarch, add approx 1/4 cup of water, until consistency is like a paste, add to pot, add the rest of the frozen corn to the pot
4. Add milk and stir
5. Add salt and pepper to taste
6. Let soup simmer for 15 - 20 mins stirring occasionally
7. Enjoy with your favorite side!!
